PORK TENDERLOIN
WITH PEARS AND BAKED POTATOES.

INGREDIENTS FOR 4 PORTIONS

1 tenderloin 500 – 600 g
3/4 teaspoon salt
3 cloves of garlic
1/2 teaspoon hot pepper
1 tablespoon of oil for greasing + 1 tablespoon for frying
Pears:

2 and 1/2 pears (400 g)
3/4 large white onion
a handful of seedless dried dates (about 7)
a handful of fresh thyme (you can add 1/2 teaspoon dried)
1 teaspoon of butter
3/4 level teaspoon of salt
2 cloves of garlic
2 tablespoons of white wine (you can replace water with a little apple or wine vinegar)
Potatoes:

1/2 kg of potatoes (8 small or 4 large potatoes)
oil, salt, Provencal herbs

 

A method of preparing

 

1. Preheat the oven to 220 degrees. If you are preparing potatoes for a dish, start with them. If not, go to step 2. Thoroughly scrub or peel, make incisions without fully cutting. Brush with oil, preferably using a brush and gently spreading the potato slices. Sprinkle with salt (about 1 flat teaspoon) and any herbs. For spiciness, you can add chilli or hot pepper. Place in a saucepan, pot or on a baking sheet lined with baking paper and put in a preheated oven. Bake small potatoes for 40 minutes and larger potatoes for 1 hour.

 

2. Cut the tenderloin in half. Rub the meat with chopped garlic, oil and spices. Set aside for 10 minutes. After this time, fry the tenderloin in a pan, 2 minutes on each side. Make space on the baking tray with potatoes and put the sirloin in for 10-12 minutes (this means that we put the sirloin in about 15 minutes before the end of baking the potatoes). In the meantime, prepare the pears, point 3. Take the meat out, wrap it in aluminum foil and let it rest for 5 minutes. Then, cut into thicker slices. Arrange on plates or on a platter, serve with prepared pears and potatoes

 

3. Pears with dates:

In a frying pan, melt the butter, add the finely chopped garlic and onion. Fry on medium heat for a minute (you don’t want them to turn brown, they should soften). Peel the pears, cut into thick cubes, except for the seed nests. Finely chop the dates, add to the onion together with the pear, mix, then add the wine, salt and finely chopped thyme, stew for 6-7 minutes. Finally, add a little pepper.
