Coconut pancakes with fruit.

shopping list Ingredients for 16 pies
50 g of coconut flour
35 g of coconut oil
1 teaspoon of stevia or other sweetener
1/2 teaspoon baking powder
3 small eggs
125 ml of any milk
1 heaped tablespoon of Greek yogurt (about 30-40 g)
for serving: sliced strawberries, blueberries, almond flakes, honey, Greek yoghurt

A method of preparing

 

In a bowl, beat the eggs, milk and yoghurt, melt the coconut oil and add to the bowl along with the flour, sweetener and powder. Mix everything thoroughly and set aside for 10 minutes, until the coconut flour is swollen. Brush the non-stick pan with a bit of coconut oil and fry four pancakes per turn. Gently turn when the sides start to blush (be careful not to burn). Slice the strawberries and put them into slices. Toast the almond flakes in a dry frying pan. At the top of the pancake tower, place a few slices of strawberries, a tablespoon of yogurt and sprinkle with cereal. Pour a little honey over it.
