OAT PACES WITH CINNAMON PLUMS

Oat pancakes are a perfect proposition for a lazy breakfast or a slightly lighter dessert. They come out plump and extremely tender, but it’s the plum sauce that makes them so tasty.

INGREDIENTS FOR 4 PORTIONS

 

½ cup of oatmeal (65 g)
½ cup of wheat flour (65 g) or whole wheat flour
1 tablespoon of brown sugar
1 teaspoon of baking powder
½ teaspoon of baking soda
1 egg
¾ cup of buttermilk
pinch of salt
a little oil

Stewed plums:
8 Hungarian plums
3 tablespoons of honey
½ teaspoon of cinnamon
1 teaspoon of butter
1 flat teaspoon of potato flour

A method of preparing

 

Blend the oatmeal into a powder, mix with wheat flour, sugar, powder, soda and salt. In a bowl, beat the egg and add the buttermilk. Combine wet ingredients with dry ingredients. Preheat the pan, brush with a little oil and wipe gently with a paper towel. Fry the pancakes for 2-3 minutes on each side.

In a saucepan, heat the butter and add the plums cut into eighths. Add honey and simmer uncovered for 10 minutes, stirring occasionally. Finally, thicken with potato flour and a little cold water.

We serve ready-made pancakes with warm plums.
