ONE-CUP DISH WITH CHICKEN AND BROOCULAR

INGREDIENTS FOR 4 PORTIONS
400 g chicken breast (1/2 teaspoon salt, 1/2 teaspoon sweet and hot pepper, 1 tablespoon oil)
1 medium-sized onion
4 cloves of fresh garlic or 2 teaspoons of dried
1 tablespoon of oil
200 g of long grain rice (1 cup)
2 and 1/2 cups of broth
1/2 cup of 12% liquid cream (125 ml)
broccoli (3/4 head)
100 g of yellow cheese
a handful of pumpkin seeds
fresh parsley to serve
pepper, salt
A method of preparing
Dice the breast and sprinkle with spices, set aside for a few minutes. Glaze the finely chopped onion in a tablespoon of oil (about 2 minutes), put it aside and add the chicken, fry for about 2-3 minutes. Add the garlic squeezed through the press, stir, add the rice. Water with part of the broth, cover and reduce heat. Water the broth until it is exhausted, stirring occasionally (about 20 minutes). After this time, add the cream and add the broccoli florets, stir. Cover and leave on fire for about 5 minutes. Stir in part of the grated cheese and season with pepper and optionally salt. Preheat the oven with top heat to 210 degrees. Sprinkle the dish with the rest of the cheese and pumpkin seeds. If it is made in a pot / pan with metal handles, put it directly in the oven for 3 minutes (if not, put it in a casserole dish). Remove from oven, sprinkle with fresh parsley and serve.
